This link is a link that you can down load a publication that is off of the FSIS web site the file is called SupDoc. It is great for finding supporting documentation and guides you what to look for as far as CCP's

This link will take you to a page with generic models for different types of HACCP plans. Do not fall into the trap of trying to pass these off as your own! Read through them and get the gist of what they are looking for.

If you can find a book called "Your Self-Study guide to understanding how to develop a haccp plan" Get a copy FSIS sent it out with a letter basically saying that if you followed this material and sent the forms in that you would not have to go to HACCP Training. The forms in the back are very user friendly
